When I Can No Longer Stand Hubby's Heart Healthy Diet,

I break down and make a not quite as bad for you PIZZA!
Preheat oven to 370 deg. F.

Impatient Cook's Pizza Crust:
2 1/2 cups flour
1/2 tsp baking soda
1 tsp baking powder
1/4 tsp salt (more if you wish, but toppings are salty)
1 tsp dried basil, crushed
1 tsp dried oregano, crushed
slightly < 1 cup tomato juice
(drained from a can/jar or  drained from fresh tomatoes,
add water if not enough)
1/3 cup olive oil
liquid drained from approx. 3/4 cup lowfat cottage cheese

Mix dry ingredients.
Whisk liquid ingredients until emulsified slightly,
then add to dry ingredients.  Stir just until moist throughout.
Flour baking stone or pan.  Roll out dough until it hangs over edges slightly.  Then roll over edges and crimp like you would for pie crust.  Bake crust for 10-12 minutes, or until set enough that toppings will not cause it to become mushy.  Remove from oven and add toppings.

Suggested Toppings:
(place on crust in this order)
3/4 cup drained lowfat cottage cheese
1/2-3/4 cup cooked beet greens,
blanched and drained (salad spinner)
(spinach may be substituted for beet greens)
1 cup sliced or canned tomatoes, drained (salad spinner)
basil and oregano sprinkled to taste
A few crispy bits of precooked bacon for flavor
1/2-3/4 cup cows milk feta (style) cheese
(fake feta, the real stuff is made from goats' milk and costs $$)
approx. 1/4 pound lowfat, part-skim mozzarella cheese,
sliced very thin
green and calamata olives, sliced

Return pizza to oven and bake for 15-25 minutes until cheese is melted and starting to brown.
Remove pizza from oven, slice, and ENJOY!

  3. What we get at the store keeps us from running out. You can keep cheese in mind when it is time for presents. Cheddar and swiss are the preferred types.
