The Disappearing Citrus Cottage Cheese Pie

It disappeared again before I could get any pictures.
Oh well, Here's the recipe.
You'll just have to use your imagination for now.

Crustless Citrus Cottage Cheese Pie

INGREDIENTS:
2 pounds lowfat cottage cheese
2 cups skim milk
4 eggs
1 3/4 cups sugar
1/2 cup flour
1 Tbs. vanilla
Zest (chop in very small pieces) and juice of 2 lemons
  OR zest of two oranges and 1/2 cup lemon juice
  OR maybe some key lime juice and lemon zest

Mix everything in a blender on med or high.  You may need to mix it in 2 or 3 batches to blend it all.  A Kitchen Aid blender will hold the cheese and eggs in one batch and the milk, flour, sugar, and vanilla in the next.  Pour into a bowl and stir the batches to mix fully, then pour into a greased 9"x13" pyrex baking dish.  Sprinkle the top with cinnamon.  Bake at 350 degrees for 45 minutes to 1 hour until a knife inserted in the center comes out clean.  Can be eaten while still warm or chilled.

The consistency is somewhere between a cheesecake and Yorkshire pudding, but unlike Yorkshire pudding - this is very tasty cold with a cup of tea or coffee.  Or if you're feeling lazy, it makes a pretty decent breakfast in-a-hurry if made ahead the night before.
