Mock Kringle

Kringle: a pastry typically made with butter, sour cream, and flour.


Mock Kringle: an attempt to simulate, but not duplicate the original.  This recipe is NOT low fat, but it does significantly reduce the saturated fat content.

Pastry Ingredients:
2/3 Cup Olive Oil
2/3 Cup Reduced Fat Sour Cream (Breakstone's only!  Other brands use so many starches and gums as thickeners that they might as well be called sour cream flavored pudding.)
1 1/2 Cups All Purpose Flour
1/2 teaspoon baking soda
1 teaspoon salt

Filling Ingredients:
Approximately 2 cups of cooking apples, peeled, cored, and sliced
1/4 to 1/2 Cup sugar (depends on tartness of apples)
1 to 2 tablespoons flour
1 teaspoon cinnamon

Frosting:  mix to make a semi-runny drizzle
1 teaspoon Smart Balance Light melted
approx. 1/2 to 3/4 cup powdered sugar
1 teaspoon vanilla

Instructions:
Preheat oven to 350 degrees F.
For the pastry, mix dry ingredients.  In a separate container emulsify the sour cream and olive oil.  Mix with dry ingredients, just until blended.  It will be a very soft dough.  Roll out immediately on a well floured baking stone.  Roll dough to the edges of the stone.
Mix dry ingredients of the filling (sugar, flour, & cinnamon).  Sprinkle 1/2 of it over the dough, leaving a 2-3 inch edge around the outside without the mixture.  Arrange the apples on top of the sprinkled stuff, and sprinkle the remaining mixture on top of the apples.  Fold the dough over the outside edges of the apples.  Bake for 30-40 minutes until slightly browned on the edges.  Remove from the oven, allow to cool slightly, and frost.  Eat while still warm, perhaps accompanied with some cheese.  Fresh cheese curds (still squeaky) work well or maybe a small serving of 5 year aged cheddar.
Took a road trip to the factory today.  It is a bit of a trek, and hubby can't eat much cheese.  I will have to share some with mom & dad, and the mozzarella balls will go in the freezer.  Union Star has a website and will ship pretty much anywhere as the weather cools this fall and winter if you're interested in trying their creations.
